December 27, 2015 (day 27)
Doesn't seem that long ago that I was counting days until I began the Whole30. Now, I'm counting down to the end - only 3 more days! As I said yesterday, I am nervous because I am the sort of person who likes strict rules to follow - that is probably why I am doing so well on this program. When I get weighed on Day 31, I will decide how to proceed. But I will say I am now much more aware of what I eat & cutting out diet soda (I am in love with Coke Zero) can only be a good thing.
Trying a new recipe tonight. Enchilada Stuffed Sweet Potatoes. I've avoided this recipe - even though the folks in my Whole30 group say it is great - because you have to make a separate sauce. I hate that.
This recipe was very good. I cut it down a bit to have dinner for 2 nights. And I used the onions in the sauce because the only arrowroot I could find was a 1 pound bag for over $7.00. That seemed like a waste for a recipe that calls for 3 tablespoons. Also, I did not puree them and they were fine.
Finally, the sweet potatoes took MUCH longer than 40 minutes to bake. I'd say at least an hour and I have a fairly new oven, so be warned. Next time, it will be a breeze.
