First of all, I can't believe I only have 7 more days to go. I am surprised that it has been relatively easy.
Today is my wedding anniversary. Normally, that would involve a (fattening) dinner and drinks out & a sugar-laden dessert. But due to Whole30, we are eating in; still, I wanted to do something a little special. I've mentioned before that since we keep Kosher this adds a bit more of a challenge for meat (all meat has to be certified Kosher & there are very few places to get Kosher meat in Tallahassee). But I went to Trader Joe's yesterday and picked up some Kosher rib eye steaks, so that will be a treat.
So here is my anniversary dinner: steak, salad, roasted butternut squash (recipe courtesy of my "third daughter" & RD, Amy Gorin), and roasted Brussels sprouts.
The squash:
Happy Anniversary to us!
