Breakfast: veggie omelet. I hate eggs, but made it well done & it wasn't bad. One "issue" - how long it takes to make everything. My prior go to breakfast was yogurt & fruit. Prep time: 10 seconds.
Lunch: tuna over lettuce with peppers, mushrooms, olives, tomatoes, avocado, oil & vinegar. Hard to get used to being "allowed" to eat all this fat.
Snack: nuts. Love TJ's prepackaged nuts because I have a "huge" (ha, ha) problem with portion control.
Dinner: Started Paleo sweet potato chili in crock pot for dinner. Used 1 lb turkey & 1 lb beef because that is what I had. Looks like it makes a ton so I will have lots to freeze.
So dinner was pretty good...maybe could have been a bit spicier. Recipe calls for "1/2 cup chili powder." That can't be right, so I may have gone too lightly. Made enough for many more meals. Froze some & we will be eating it Weds & Thurs for dinner.
Today was fine, but prepared to "hit wall" tomorrow.
