December 2, 2015 (Day 2)

Alright folks, let's talk coffee. Seriously, the FIRST thing I do in the morning... and I mean the FIRST...is start the coffee.  We have a great coffee maker that grinds the beans and then brews.  We set it up the night before & then just press start in the morning.

So I love me my coffee!  Usually, I put in a splenda and some flavored creamer (at this time of year, I love pumpkin spice.  And yes, I love Starbucks Pumpkin Spice Lattes!)  So I was worried that using only coconut milk and no sweetener would be a bummer. Surprise! I actually like the coconut milk & can really taste the coffee.  So coffee lovers (like me), no worries!

Also, I was prepared to feel yucky today, based on the Whole30 timeline, Days 2-3 are supposed to be "hangover" days, but so far so good.  Ok, its only 10 am. I'll report back at the end of the day.

I had the same breakfast, lunch & dinner as yesterday (I am lazy & clearly need to change it up) but did have almond butter & an apple for snack.Yummy!



While I did have a veggie omelet for breakfast again,  I  need something quicker for breakfast.  Someone suggested Monkey Salad, so off  I went to Trader Joe's for the ingredients. I see a lot more TJ in my future as it is much easier to find non preservative products there.

Recipe for Monkey Salad is below, though you probably don't need it. I will try it tomorrow, probably along with a hard boiled egg.  I don't really like eggs, so no one is more surprised than me that I am eating so many.


Ok, Day 2 is over & I felt fine. We will see what Day 3 brings.  One thing is for sure, I am going to have to work on some different menu items!
